This is the vegetable I look forward to seeing the most after winter. It's a member of the lily family and was first cultivated by the Ancient Greeks. It is a good source of potassium, B6 and vitamin A and C. Just about any diet whether it's low fat or low carbs recommends asparagus. Cut off the tough ends and keep the tender spears. It's best steamed but you can put it in a bowl with a bit of water on high for around two minutes in the microwave. Serve asparagus with a squirt of lemon or with butter or cheese sauce. As for those tough ends, don't throw them out. Use them for soup stock.
