You use this vegetable as a fruit. Originally from Asia, rhubarb is now considered to be very North American. It's great in pies and is a perfect compliment to apples. I use one cup sliced rhubarb to around three apples. Depending on your personal tastes you may wish to put in a bit more sugar or sweetener when using rhubarb because it's tart. (Unless you're like me and you like it that way!) Rhubarb is low in calories, so it is a boon for dieters, but only if you use artificial sweeteners. It's at its prime from April to September. It should have an even color and be stiff not limp.
