Christmas and Pineapples

Pineapple tarts are a symbol of Christmas for me. Since we came from Malaysia, mom's repetoire of holiday dishes tended to be more exotic. She has continued that tradition and makes her tarts every Christmas. They are, indeed, a form of comfort food for me. Try out my mother's recipe. It will warm your tummy.
