Chicken Korma is a dish that recalls the Moghul Empire of India -- ruled by Persian invaders who put their stamp on architecture, tombs and the food of the north. This recipe comes from Madhur Jaffrey, who has been spreading the word of Indian Cuisine for almost three decades. Delicious with saffron rice and some spicy-fried veggies.
