CABERNET SAUVIGNON.
Herbaceous, oaky, fruity, vegetal, weedy, tannic, chalky, cassis, raspberry, peppermint, cherries, violets, plums, prunes, black currents, cranberry, green olives, mint, chocolate, cedarwood, eucalyptus, bell pepper, black tea, rhubarb, molasses, soy sauce.

MERLOT.
Herbaceous, violet, black pepper, wild cherry, cedarwood, cigar box, roses, pipe tobacco, fruity overtones.
Cabernet Franc.
Berry-like, raspberry, spicy, herby, weedy, violets, pencil shavings.

PINOT NOIR.
Ripe cherry, caramelized sugar, strawberries, pomegranates, peppermint, cinnamon, plum jam, roses, perfumed flowers, violets, leather, earthy, barnyard, tar, roasted meat, coffee, mushrooms.

ZINFANDEL.
Brambly fruit, cherry, black pepper, spice, blackberries, strawberries.

GAMAY.
Berry, strawberry, grapy, jammy, raspberry.Known as Beaujolais.

SYRAH.
Blackberries, leather, peppery, cassis, rubbery, smoke, dry pepper, coffee, tar, hickory wood, chestnuts, truffles.

GRANACE.
Light, fruity, high alcohol, blackcurrants, pepper, licorice, and roasted peanuts.

MOURVEEDRE.
Plum flavors, spicy, blackberries, raspberry, leather, truffles, fresh mushroom, tree bark.

NEBBIOLO.
Tar, violets, truffles, faded roses, leather or licorice, non-fruity quality.

DOLCETTO.
Impression of sweetness, bitter almonds, mulberries, blackberries, chocolate.

SANGIOVESE.
Gray, earthy, farmyard. Wide variation of characteristics.
