If you have a wine collection or just about to start one you must be sure to try and make your cellar as versatile as possible. By versatile I mean try to have a variety of wines that will match with different occasions and food. Many of us start off with a good selection but after a while seem to dwindle down to a few grape varietals from a few countries. Even though I personally don't collect white wine for aging, I do collect and drink them in a short term. The key to becoming a connoisseur is being well rounded in all varietals, and styles. "You must kiss a lot of toads before you find the prince", the same goes for wine. You have to be willing to try new products to find the one for you. One way to lower the risk of spending money on a wine that is not your taste is to ask your liquor store salesperson. They are usually a vault of knowledge. If you strike out with your local salesperson and want information before you put your hard earned money on the table, try a specialty wine store. The staff at the specialty wine stores are usually very highly educated in wine and if the salesperson does not have the knowledge you need ask for the manager.
