And of all these species mentioned here, Day Lilies provide the most possibilities; they are a salad bar unto themselves. Its young shoots can be added to salads or prepared like asparagus. The flower buds can be used instead of green beans, or prepared as fritters. The mature, fresh flowers can also be made into fritters, and the flowers, whether fresh, wilted, or dried out can be used as a seasoning in stews. The young, crisp tubers can be added to salads, and at any age prepared like corn. It's all making me hungry, and I'm not a big salad eater.

So, the next time you're out admiring wildflowers, you might also be looking at dinner.
