'Tis the Season for Appetizers

One of my favorite things about this time of year is all the wonderful food that we get to indulge in during the holiday season. In my family, the Christmas Eve appetizer buffet is a much-anticipated tradition. I try to vary the offerings a bit each year, and I recently found two great new hors d’oeuvres recipes that just might find their way onto this year’s buffet table. I found them both in a new cookbook I ordered called Taste of Home’s Holiday & Celebrations Cookbook 2001.

Chili Cheese Snacks are delicious little morsels. We thoroughly enjoy anything made with refrigerated crescent rolls, it seems. These bite-size treats have a tasty filling of cheese, chilies and olives with just the slightest kick to it nestled in crescent dough. We gave this appetizer five stars.

Looking for something a little different than the traditional cold deli tray? Why not whip up a Baked Deli Sandwich? This appetizer was fairly easy to prepare, and it turned out just scrumptious. We all loved this one and give it five stars in the ratings. Though it is recommended to serve pizza sauce alongside, we preferred to use horseradish sauce as a dip for the sandwich slices. So yummy!

Chili Cheese Snacks

Makes 80 appetizers

Ingredients:
2 pkgs. (3 oz. each) cream cheese, softened
1 cup (4 oz.) shredded Cheddar cheese
¼ cup chopped green chilies
¼ cup chopped ripe olives, drained
2 tsp. dried minced onion
¼ tsp. hot pepper sauce
2 tubes (8 oz. each) refrigerated crescent rolls

Preparation:
In a small mixing bowl, beat the cream cheese. Add the cheddar cheese, chilies, olives, onion and hot pepper sauce. Separate each tube of crescent dough into four rectangles; press perforations to seal. Spread cheese mixture over dough. Roll up jelly-roll style, starting with a long side. Cut each roll into 10 slices; place on greased baking sheets. Bake at 400°F for 8-10 minutes or until golden brown.

Baked Deli Sandwich

Makes 4-6 servings

Ingredients:
1 loaf (1 lb.) frozen bread dough, thawed
2 Tbsp. butter or margarine, melted
1/8 tsp. garlic powder
1/8 tsp. salt
¼ tsp. dried basil
¼ tsp. dried oregano
¼ tsp. Italian seasoning
¼ lb. sliced deli ham
6 thin slices mozzarella cheese
¼ lb. sliced deli smoked turkey breast
6 thin slices cheddar cheese
Pizza sauce, warmed, optional

Preparation:
On a baking sheet coated with nonstick cooking spray, roll dough into a small rectangle. Let rest for 5-10 minutes. In a small bowl, combine the melted butter and seasonings. Roll out dough into a 14-in. x 10-in. rectangle. Brush with half of the butter mixture. Layer the ham, mozzarella cheese, turkey and cheddar cheese lengthwise over half of the dough to within ½ inch of edges. Fold dough over and pinch firmly to seal. Brush with remaining butter mixture. Serve with warmed pizza sauce, if desired.
