Easy Italian Meals: Chicken Parmigiana Recipe

This recipe has been adapted from Allrecipes.com, a great website with hundreds of recipes that have already been tried and rated by users of the site.

This entrée is quite simple to prepare yet takes an hour of total bake time. Even though it may take up to an hour and a half from start to finish, the results are decidedly fabulous. The breaded chicken is delicious and cheesy.

As with many other Italian main dishes, it goes well with garlic bread and a tossed salad.

Ingredients:

4 boneless, skinless chicken breast halves
1 egg, beaten
½ cup dry bread crumbs (can be plain or Italian seasoned)
1 (26-oz.) jar spaghetti sauce
4 oz. (1 cup) shredded mozzarella cheese
½ cup grated Parmesan cheese
12 oz. spaghetti noodles

Preparation:

Preheat oven to 350°F. Lightly spray a medium baking sheet with nonstick cooking spray. Beat egg in a small shallow bowl. Place bread crumbs in a separate shallow bowl. Dip chicken into the egg, then into the bread crumbs, coating evenly.

Place coated chicken on the prepared baking sheet and bake in the preheated oven for 40 minutes, or until chicken is no longer pink and the juices run clear. Pour half of the spaghetti sauce into a 2-quart baking dish. Place chicken pieces over the sauce and cover with remaining sauce. Sprinkle the mozzarella and Parmesan cheeses over top and return to the 350°F oven for 20 minutes.

Meanwhile, cook spaghetti noodles to desired doneness according to package directions; drain. Serve chicken and sauce over the pasta.

Makes 4 servings.
