Crab and Rice Primavera


This week I found a new recipe containing imitation crabmeat, one of our favorite ingredients. It’s a colorful dish consisting of crabmeat, rice, and veggies, such as broccoli, onions, mushrooms, and red peppers. This meal was also a cinch to throw together and it cooks up quickly.

However, the taste was rather mediocre. This entrée was pretty good but nothing great. We give it three stars. My husband also noted that it doesn’t reheat well and tastes even worse the next day. Don’t think I’ll be making this one again.

Crab and Rice Primavera

Makes 4 servings

Ingredients:
1 lb. (16-oz.) pkg. broccoli stir-fry
½ cup water
2 cups skim milk
¾ cup shredded Parmesan cheese
2 Tbsp. margarine
1 tsp. dried basil
1 tsp. garlic powder
1 lb. (16-oz.) imitation crabmeat, flaked or shredded
2 cups uncooked instant rice

Preparation:
In a large saucepan, bring vegetables and water to a boil. Reduce heat; cover and simmer for 3 minutes. Stir in milk, Parmesan cheese, margarine, basil, garlic powder and crabmeat. Bring to a boil. Stir in rice. Remove from the heat; cover and let stand for 5 minutes. Fluff with a fork. Serve immediately.
