Chicken Fajita Pizza

Believe it or not, I have never made a homemade pizza before, so this was something new and different for me. After trying to spread the dough out on one of my pizza pans and ruining it, I ran to the store for another can of pizza crust and this time rolled it out onto a baking sheet. Much better.

This pizza was fairly easy to prepare, once I discovered the baking sheet, that is. Even though the dish contains chili powder and salsa, it wasn’t really that spicy, but it certainly was delicious just the same. My husband loves pizza, so he enthusiastically wolfed down a few pieces of this one. He especially enjoyed it with lots of garlic powder sprinkled on top. We gave this meal five stars.

My first attempt at pizza turned out well, so I’m planning to try another pizza recipe in the next few weeks. Check back for a recipe called Turkey Club Pizza in the near future.

I simply served a tossed salad alongside the pizza to make a complete meal. Enjoy!

Chicken Fajita Pizza

Makes 8 servings

Ingredients:
1 (10-oz.) can refrigerated pizza crust
1 Tbsp. olive oil
4 boneless skinless chicken breast halves, cut into thin bite-sized strips
2 tsp. chili powder
½ tsp. salt
½ tsp. garlic powder
1 medium onion, thinly sliced
2 green peppers, cut into thin strips
½ cup salsa
8 oz. (2 cups) shredded Monterey Jack cheese

Preparation:
Heat oven to 400°F. Spray a medium baking sheet (approximately 15”x10”) with nonstick cooking spray. Unroll dough and place in sprayed pan. Starting at center, press out with hands. Bake at 400°F for 8 minutes or until very light golden brown. Meanwhile, heat oil in a large skillet over medium-high heat until hot. Add chicken; sprinkle with chili powder, salt and garlic powder. Cook and stir 3 to 5 minutes or until lightly browned. Add onions and green pepper strips; cook and stir an additional 2 to 3 minutes or until chicken is no longer pink in center and vegetables are crisp-tender. Remove crust from oven. Spoon chicken mixture evenly over partially baked crust. Spoon salsa over chicken. Sprinkle with cheese. Return to oven; bake an additional 16 minutes or until crust is golden brown.
