Golden Onion Chicken

This week I tried a casserole dish that sounded like classic comfort food just from reading the list of ingredients--chicken, potatoes, cream of chicken soup, sour cream and french-fried onions. A satisfying comfort food that is also a cinch to prepare. This meal can be thrown together rather quickly, but it takes a total of 1 hour and 25 minutes to bake.

We all loved the finished product. It was creamy and delicious, and the french-fried onions just completed the whole taste experience. Since I use reduced-fat and fat-free products in all my cooking, my husband wonders just how delectable this meal would be prepared with the full-fat ingredients. And that got him thinking--would several of our 4-star meals become 5-stars if they were prepared with the original, full-fat versions of their ingredients? Things that make you go, “Hmmm.”

To compliment the tender chicken and the creamy potatoes, I served a side dish of baby corn blend frozen vegetables.

Golden Onion Chicken

Makes 4 servings

Ingredients:
4 boneless skinless chicken breast halves
4 medium potatoes, peeled and quartered
1 can (10-3/4 oz.) 98% fat-free condensed cream of chicken soup, undiluted
1 cup (8 oz.) light or fat-free sour cream
1 can (2.8 oz.) french-fried onions

Preparation:
Place chicken in a 13x9x2-inch baking dish that’s been sprayed with nonstick cooking spray. Arrange potatoes around chicken. Combine soup and sour cream; spread over chicken and potatoes. Bake, uncovered, at 350°F for 1 hour and 15 minutes. Sprinkle with onions and bake an additional 10 minutes.
