Cheesy Salmon Macaroni


Ever since my husband and I sampled canned salmon at our local Costco, I’ve been hooked. It’s just so much tastier than tuna, in my opinion. So, when I came across this recipe for Cheesy Salmon Macaroni, I just had to try it. It sounded very similar to my Cheesy Tuna Noodle, only with salmon, so I figured it would be pretty tasty. I was right! This meal was very cheesy and really good. We all enjoyed it immensely and awarded it four stars in the ratings.

When I cook, I use mostly low-fat and fat-free ingredients, and this recipe was no exception. I used the light version of the deluxe mac & cheese dinner, 98% fat free cream of mushroom soup, skim milk, and light margarine. I would normally use a reduced-fat cheddar cheese, as well, but I did not this time around.

This meal was not only palate pleasing, it was also quick and easy to prepare and bake. You can have it on the table in less than an hour. I’d suggest serving garlic bread and broccoli on the side. Hope you enjoy it!

Cheesy Salmon Macaroni

Makes 4 servings

Ingredients:
1 pkg. (14 oz.) deluxe macaroni and cheese dinner mix
1 can (10-3/4 oz.) condensed cream of mushroom soup, undiluted
½ cup milk
1 can (6 oz.) skinless, boneless salmon, drained
½ tsp. onion powder
½ cup shredded cheddar cheese
½ cup plain dry bread crumbs
2 Tbsp. margarine, cubed

Preparation:
Prepare macaroni and cheese according to package directions. Stir in the soup, milk, salmon, onion powder and cheddar cheese. Transfer to a greased 13x9x2-inch baking dish. Sprinkle with bread crumbs; dot with margarine. Bake, uncovered, at 375°F for 30 minutes or until heated through.
