Since the weather has turned chilly, I decided to try a casserole dish for this week. Casserole dishes are great any time of year, but I’m particularly fond of fixing them during the winter months, because it’s just a great “comfort food.” This dish was fairly easy to prepare and doesn’t take all that long to bake in the oven. You can prepare this recipe from start to finish in about an hour.

My husband described this dish as tasting like a Manwich, only in a casserole instead of on a bun. In fact, he’s the one who came up with the clever title for this recipe. It tastes like a sloppy Joe, but it’s not sloppy. We really enjoyed it and gave it four stars in the ratings. I’ll be making this dish fairly often, I’m sure.

Not-So-Sloppy Joe

Makes 6 servings

Ingredients:
12 oz. uncooked egg noodles
1 lb. lean ground beef
1 small onion, chopped
1 small green pepper, chopped
1 (15.5 oz.) can sloppy Joe sandwich sauce
1 (10-3/4 oz.) can condensed cream of mushroom soup
1 (4 oz.) can mushrooms, drained
4 oz. (1 cup) shredded Cheddar cheese

Preparation:
Cook noodles to desired doneness as directed on package. Drain. Meanwhile, heat oven to 350°F. Spray a 13x9x2-inch casserole dish with nonstick cooking spray. In a large skillet over medium-high heat, cook beef, onion and pepper until beef is browned and vegetables are tender. Drain. Add sandwich sauce, soup and mushrooms; mix well. Heat until bubbly. Gently stir in cooked noodles. Pour mixture into sprayed casserole dish. Sprinkle with cheese. Bake at 350°F for 25 minutes or until casserole is thoroughly heated and cheese is melted.
