Cabbage Skillet Supper


This week I tried an interesting low-fat recipe. Even though I’ve never had cabbage rolls, I’d imagine that this dish is an easier-to-prepare version of that recipe. It contains cabbage, ground beef, cooked rice, vegetables and spices—and what a delightfully different combination of flavors those ingredients produce. This meal was different than the usual fare found on our dinner table, and it was certainly a welcome change. All three of us give this one a big thumbs up!

My husband and I didn’t think our five-year-old daughter would eat it—but surprise—she gobbled it up. It's a tasty way to sneak cabbage into your kids. We gave this meal four stars out of five stars. I’ll surely be making this one again in the near future.

Suggested accompaniments include dinner rolls, cherry tomato wedges, broccoli, and cucumber salad.

Cabbage Skillet Supper

Makes 6 servings

Ingredients:
½ cup uncooked instant rice
½ cup water
1 lb. lean ground beef
½ cup finely chopped celery
½ cup chopped onion
1 tsp. Nature’s Seasoning
2 eggs, well beaten
1 (16-oz.) pkg. coleslaw blend
1 (8-oz.) can tomato sauce, no salt added
¼ cup firmly packed dark brown sugar
3 Tbsp. apple cider vinegar

Preparation:
Cook rice in water as directed on package. In a medium bowl, combine cooked rice, beef, celery, onion, Nature’s seasoning and eggs; mix well. Spray a 12-inch nonstick skillet with nonstick cooking spray. In sprayed skillet, add 3 cups of the coleslaw blend; spread to cover bottom of skillet evenly. Spoon beef mixture evenly over coleslaw blend; press lightly with back of spoon. Top with remaining coleslaw blend. In a small bowl, combine tomato sauce, brown sugar and vinegar; blend well. Pour over mixture in skillet. Cover; cook over medium heat for 10 minutes. Uncover and reduce heat to medium-low; cook an additional 12 minutes or until beef mixture is thoroughly cooked. Remove skillet from heat. With cover partially on skillet, drain off liquid. Cut into wedges to serve.
