This week's featured recipe is called "Creole Skillet Supper." Even though this meal contains only six ingredients, it is simply superb. I've made this one numerous times since I discovered it because my husband and I enjoy it so much. Basically it's just kielbasa, onions, green peppers, and tomatoes in rice, but is it ever delicious! If you prefer spicy food, I highly suggest adding a few drops of hot pepper sauce to your serving.

I like to serve this dish alongside French-style green beans and corn muffins. I hope you enjoy it!

Creole Skillet Supper

Serves 4

Ingredients:
1 medium onion, chopped
1 medium green pepper, chopped
14 oz. low-fat polska kielbasa, quartered lengthwise, sliced
1 (14-1/2 oz.) can diced tomatoes with basil, garlic and oregano
2 cups water
2-1/2 cups uncooked instant rice

Preparation:
Spray a large nonstick skillet with nonstick cooking spray. Heat over medium-high heat until hot. Add onion and green pepper; cover and cook until vegetables are crisp-tender, stirring once. Add kielbasa, tomatoes and water; mix well. Bring to a boil. Stir in rice; return to a boil. Cook over low heat for about 5 minutes or until rice is tender. Fluff with a fork before serving. Serve with hot pepper sauce, if desired.
