Sesame Chicken


Featured this week, we have a recipe that my husband and I picked based on its name-Sesame Chicken. The ingredient list, consisting of items such as soy sauce, sesame seeds, onions and mushrooms, sounded quite appetizing as well. The cubes of chicken retained a good flavor, having been cooked in the soy sauce mixed with sesame seeds; however, there wasn't anywhere near enough of a sauce for this dish to be served over rice. Perhaps you could serve it by itself with rice and a veggie on the side. It just didn't have ample sauce to accommodate the bed of rice I put it atop. We gave this one three stars.

Sesame Chicken

Makes 4 servings

Ingredients:
1 lb. boneless skinless chicken breasts, cubed
2 Tbsp. canola oil
¼ cup soy sauce
¼ cup sesame seeds
1 large onion, sliced
2 cans (4 oz. each) mushrooms, drained

Preparation:
In a large skillet over medium-high heat, cook chicken in oil until no longer pink. Stir in the soy sauce and sesame seeds. Cook and stir over medium heat for 5 minutes. Remove chicken with a slotted spoon; set aside and keep warm. In the same skillet, sauté onion and mushrooms until onion is tender. Return the chicken to pan and heat through. Serve.
