Zesty Pork Tenderloin


Since it's summertime, I have another grilling recipe for you to try this week. I'll call this one Zesty Pork Tenderloin. This succulent dish gets its flavor from the marinade made from honey, Dijon mustard, chili powder and salt. Simple ingredients yield tremendous flavor in the pork. We gave this grilled pork our highest rating of five stars. The pork turned out so moist, juicy and flavorful. Along with the tenderloin, I served up a mixture of peas and mushrooms and a side of instant four cheese mashed potatoes. This meal was simply superb.

Zesty Pork Tenderloin

Makes 6 servings

Ingredients:
1 pork tenderloin, about 2 lbs.
2/3 cup honey
½ cup Dijon mustard
½ tsp. chili powder
¼ tsp. salt

Preparation:
Place pork tenderloin in a shallow glass container. In a bowl, combine the honey, Dijon mustard, chili powder and salt. Set aside 2/3 cup. Pour remaining marinade over pork; turn to coat. Cover and refrigerate for at least 4 hours, turning occasionally. Drain and discard marinade. Grill pork, covered, over indirect medium heat for about 15 minutes or so on each side or until meat juices run clear and a meat thermometer reads 160°-170°. In a saucepan, warm the reserved sauce; serve with the pork.
