That's a Wrap!

Now that summer is almost here, and the temperatures outside have been pretty hot, I've been craving "lighter" fare. One of my latest creations is a sandwich wrap. Simply take a flour tortilla, spread a little light cream cheese on it, and top with onions, ham, salsa, and lettuce. It's so delicious! This wrap has been our favorite lunch fare for the past couple of weeks. Since we all loved that sandwich wrap so much, I decided to try another wrap recipe for dinner. I adapted a recipe I found at http://www.kraftfoods.com. This one consisted of light roasted garlic flavored cream cheese, roast beef and lettuce. I served these up with some pasta salad and potato chips. My daughter loved them, and my husband and I gave them three stars. They were good, but perhaps they would've been better had I used the chive and onion flavored cream cheese called for in the original recipe. I'll try it next time.

Our ham wraps that we love for lunch are worthy of four stars. The salsa just does something to it to liven it up a bit. I like adding a few jalapenos to mine, as well.

I hope you'll try one of these wraps this summer. They really are perfect fare for humid nights when you don't feel like turning on the oven or cooking on the stove. You can even create your own tortilla sandwiches by adding whatever fillers you have on hand. If you come up with a really good concoction, please pass the recipe along to me!

Roast Beef Wraps

Ingredients:
Thinly sliced roast beef
Light roasted garlic flavor cream cheese
Lettuce leaves
Flour tortillas

Preparation:
Spread cream cheese on a tortilla. Place a slice or two of roast beef on top, then top that with a lettuce leaf. Roll up tortilla and enjoy.

Ham Wraps

Ingredients:
Light cream cheese
Flour tortillas
Thinly sliced ham
Chopped onion, optional
Salsa
Lettuce leaves
Jalapeno slices, optional

Preparation:
Spread cream cheese on tortilla. Sprinkle with chopped onion, if desired. Top with ham, salsa, and a lettuce leaf. Put a few jalapeno slices in there, too, if desired. Roll up tortilla and serve.

Other kinds of fillings and bread work, too, like pita. Makes for an easy meal, my kind of meal when the weather's good. Who wants to be inside all day cooking? Jerri ...
