Looking for something new and different to do with chicken? This recipe for Honey Mustard Chicken is one to try. The chicken breasts are dipped in a mixture of honey and Dijon mustard, then coated in bread crumbs and cooked in a skillet on the stovetop. This dish is fast and delicious. We all enjoy this chicken, including my 4-year-old daughter. Mashed potatoes and a green vegetable make for appropriate side dishes to this tasty main dish. We give it four stars.

Honey Mustard Chicken

Makes 4 servings

Ingredients:
4 boneless skinless chicken breast halves (about 1 lb.)
1 cup dry bread crumbs
1 tsp. plus 2 Tbsp. Dijon mustard, divided
3 Tbsp. honey
2 Tbsp. margarine

Preparation:
Flatten chicken to ¼-inch or ½-inch thickness. Combine bread crumbs and 1 teaspoon of mustard in a shallow bowl. In another bowl, combine honey and the two tablespoons of Dijon mustard. Dip the chicken pieces in the honey mustard mixture, then coat with crumbs. In a nonstick skillet over medium heat, cook chicken in margarine on both sides until juices run clear and chicken is no longer pink in the center, about 15 minutes or so, depending upon the thickness.
