Hot dogs 'n' Scalloped Potatoes


This week I tried another recipe that was described as "kid-pleasing." This casserole lived up to its description-my daughter loved it! I'll call this one "Hot dogs 'n' Scalloped Potatoes," since that's essentially what it is. My husband thought I'd just added hot dogs to a prepared box mix for scalloped potatoes. Not exactly. It took me close to an hour of preparation before the dish was ready to be put in the oven to bake for another hour and 40 minutes. This meal was good, but since it took almost three hours total to make it, we felt it was only worthy of a 3-1/2 star rating. I doubt I'll be making this one again any time soon because it's just too much work for a meal that's just "pretty good." If I did make it again, I think I would just add a package of hot dogs to a prepared box mix of scalloped potatoes, throw it all in a casserole and bake it in the oven. That would be a whole lot easier, and it would probably taste the same as this dish-maybe even better. If you have the time, go ahead and try this one and see what you think. Or try using the box mix of scalloped potatoes for convenience. This one was tasty but just not worth the time it takes to make it.

Hot dogs 'n' Scalloped Potatoes1/2

Makes 4-6 servings

Ingredients:
1 small onion, chopped
3 Tbsp. butter or margarine
¼ cup all-purpose flour
1-1/2 tsp. salt
¼ tsp. pepper
2 cups milk
1 cup (4 oz.) Swiss cheese, shredded
2 tsp. parsley flakes
5 medium potatoes, peeled and thinly sliced
1 lb. pkg. hot dogs, halved and sliced

Preparation:
In a saucepan over medium-high heat, sauté onion in butter until tender. Stir in the flour, salt and pepper until blended. Gradually add milk. Bring to a boil over medium heat; cook and stir about 2 minutes. Remove from heat; stir in cheese until melted. Add parsley flakes. Place half of the potatoes in a greased 2-quart baking dish. Top potatoes with half of the sauce. Arrange hot dogs over the sauce. Top with remaining potatoes and sauce. Cover and bake at 350°F for 1-1/2 hours. Uncover and bake 10 minutes longer or until lightly browned.
