Hot dogs 'n' Scalloped PotatoesThis week I tried another recipe that was described as "kid-pleasing." This casserole lived up to its description-my daughter loved it! I'll call this one "Hot dogs 'n' Scalloped Potatoes," since that's essentially what it is. My husband thought I'd just added hot dogs to a prepared box mix for scalloped potatoes. Not exactly. It took me close to an hour of preparation before the dish was ready to be put in the oven to bake for another hour and 40 minutes. This meal was good, but since it took almost three hours total to make it, we felt it was only worthy of a 3-1/2 star rating. I doubt I'll be making this one again any time soon because it's just too much work for a meal that's just "pretty good." If I did make it again, I think I would just add a package of hot dogs to a prepared box mix of scalloped potatoes, throw it all in a casserole and bake it in the oven. That would be a whole lot easier, and it would probably taste the same as this dish-maybe even better. If you have the time, go ahead and try this one and see what you think. Or try using the box mix of scalloped potatoes for convenience. This one was tasty but just not worth the time it takes to make it. Have a good week and good eating!
