Beans 'n' Wienies Chowder


This week's recipe is something I'll call "Beans 'n' Wienies Chowder." This one was interesting, pretty tasty, and extremely easy to make. It's a rather inexpensive meal, as well. Basically, the dish is baked beans and hot dogs in a tomato-based broth. My husband and I thought it was pretty good, but my husband thought it would be better served over rice or something. The recipe is supposed to be a "chowder" or "soup," but it's not really a meal that should stand alone. As a result, we gave this one three stars. Now, if it had been served over rice or noodles, perhaps even macaroni & cheese, perhaps the dish may have received a four-star rating from us. It was tasty, though, so serve it up over some rice or pasta, and let me know what you think of it.

Beans 'n' Wienies Chowder

Makes 4-6 servings

Ingredients:
2 cans (16 oz. each) baked beans
2 Tbsp. butter or margarine
8 (1 lb.) hot dogs, cut into ½-inch pieces
½ small onion, chopped
1 can (14 oz.) whole tomatoes, broken up, undrained
1 cup tomato juice
1 Tbsp. brown sugar
¼ tsp. hot sauce

Preparation:
Set aside 1 cup of the baked beans. Put the remaining beans in a large bowl and mash them; set aside. In a large saucepan, melt butter over medium-high heat. Add hot dog pieces and onion. Cook for about 5 minutes, or until lightly brown. Add tomatoes, tomato juice, brown sugar, and hot sauce. Simmer 10 minutes. Add the 1 cup of reserved whole beans and the mashed beans. Reduce heat to medium-low and cook 10-15 minutes, or until the soup is piping hot, stirring occasionally.
