Spicy Sausage Soup


Winter is truly upon us now, so I'm posting a soup recipe that's sure to warm you up! "Spicy Sausage Soup" is a great-tasting soup with just a little kick to it. It's very flavorful. This recipe I tried marked the first time I'd ever made homemade soup. If I'd known how good it could be, I would've made it a long time ago! This soup was a definite five-star meal, in our opinion. My husband just raved about it. I imagine I'll be making this one quite a few more times this winter. It was easy to prepare, and it's really a meal by itself. I served homemade bread along with it, and that was the perfect accompaniment to this dish. We loved it! I hope you'll try it, and let me know if you agree with me or not on the five stars.

Spicy Sausage Soup

Makes 12-16 servings

Ingredients:
4 cups water
14 oz. polska kielbasa sausage, chopped
3 cans (10-1/2 oz. Each) condensed beef broth
1 can (28 oz.) crushed tomatoes
1 can (15 oz.) red kidney beans
1 small head of cabbage, coarsely chopped
3 carrots, chopped
1 onion, chopped
¼ tsp. garlic powder
1 tsp. salt
¼ tsp. ground red pepper

Preparation:
Combine all ingredients in a large pot. Bring to a boil over medium-high heat. Reduce heat to low, cover and simmer 2-3 hours. (The original recipe said 1-2 hours and that the longer you simmer it, the heartier it would be; so I cooked it about 3-1/2 hours.) Enjoy!
