Chicken and Biscuits


This week we tried another chicken recipe called Chicken and Biscuits. It's an easy casserole with a variety of ingredients. It's sort of similar to a chicken potpie. The original recipe called for 2-1/2 cups of cubed cooked chicken, but I just used the cooked meat from a whole chicken. I've found that this is a cheap and easy way to obtain cooked chicken for a recipe. I purchase a 2-1/2-3 pound whole fresh young chicken, remove the giblets, rinse it inside and out, then place it in my Crockpot with about 2 cups of water and cook on high for about 5 hours. When the chicken is cool, you simply pick the meat off the bones. So easy! I used the meat from one whole cooked chicken in the recipe.

The casserole also contains frozen mixed vegetables, cream of chicken soup, bacon, cheese, and it's topped with biscuit mix. I thought the meal was pretty good, so I give it three stars. My husband thought it was a four. The reason I only gave it a three was because I thought it needed a little more taste to it. Maybe next time I'll doctor it up with some spices and seasonings. My four-year-old daughter hated it, which is surprising since it contains a lot of ingredients that she loves. Oh well. We'll call it a 3 and a half star rating on this one. Chicken and Biscuits1/2

Serves 6

Ingredients:
Cooked meat from one whole chicken
1 pkg. (16 oz.) frozen mixed vegetables
1 can (10-3/4 oz.) condensed cream of chicken soup, undiluted (I use the 98% fat-free kind)
¾ cup milk (I use skim milk)
8 oz. Shredded cheddar cheese, divided
5 bacon strips, cooked and crumbled
BISCUITS:
1-1/2 cups biscuit/baking mix
2/3 cup milk (skim again)
1 can (2.8 oz.) french-fried onions

Preparation:
In a large bowl, combine the vegetables, cooked chicken, soup, milk, half of the shredded cheese, and the bacon. Pour mixture into a 13-in.x9-in.x2-in. baking dish. Bake at 400°F for 15 minutes. Meanwhile, in a smaller bowl, combine biscuit mix and milk. Drop batter by tablespoonfuls onto chicken mixture. Bake for 20-22 minutes longer or until biscuits are golden brown. Top with the french-fried onions and remaining shredded cheese. Bake about 4 minutes longer or until cheese is melted.
