Happy Thanksgiving!

Since Thanksgiving is upon us, I thought that this week I would share two of my holiday recipes with all of you. Homemade Macaroni & Cheese is a side dish that is usually a part of our Thanksgiving feast. I got this recipe from my late father-in-law. I'm still trying to find an even better homemade macaroni and cheese recipe. I like this recipe, but I don't think it's the best. I believe I'll just give it three stars for "Pretty Good." The second recipe is my favorite one for pumpkin pie. I've been making this recipe for years, and everyone just loves it. The pie is especially delicious topped with a dollop of whipped cream. I'd definitely give this pie a five-star rating. I hope you'll try it for your Thanksgiving dessert this year!

If anyone needs any tips for preparing the turkey this year, I've found two web sites that have good information. The National Turkey Federation's "Thanksgiving Cooking Tips" is a page worthy of checking out. You might also want to visit Butterball.com. Butterball has a page devoted to preparation entitled, "Ten Steps to a Picture-Perfect Turkey." You can also call their toll-free number for the Butterball Turkey Talk-Line at 1-800-323-4848 to get answers to your questions about how to prepare your turkey.

Homemade Macaroni&Cheese

Serves 6

Ingredients:
1-1/2 lbs. (24 oz.) medium cheddar cheese, grated
3 eggs
½ stick butter or margarine
1-1/2 to 2 small cans evaporated milk
1 lb. (16 oz.) elbow macaroni and cheese

Preparation:
Cook macaroni noodles according to package directions. Meanwhile, mix cheese, eggs, butter and milk. Melt cheese mixture on the stove, then add to cooked macaroni. Spray a baking pan, at least 9"x13", with non-stick cooking spray. Place macaroni and cheese in baking pan. Bake at 350° for about 1 hour, or until browned on top and edges are blackened.

Traditional Pumpkin Pie

Serves 8

Ingredients:
1 (9-inch) unbaked deep dish pastry crust
1 (16 oz.) can pumpkin (about 2 cups)
1 (14 oz.) can sweetened condensed milk
2 eggs
1 tsp. Ground cinnamon
½ tsp. Ground ginger
½ tsp. Ground nutmeg
½ tsp. Salt

Preparation: Preheat oven to 425°. In a large mixer bowl, combine all ingredients except pastry shell; mix well. Pour into pastry shell. Bake 15 minutes. Reduce oven temperature to 350°; bake 35-40 minutes longer or until knife inserted 1 inch from edge comes out clean. Cool. Garnish as desired. Refrigerate leftovers.

I made two of those pumpkin pies this year, and my husband and parents just raved about how they were the best pumpkin pies. I hope some of you tried the recipe! If not, hold on to it for next year! ...
