Crockpot Flank Steak

This week's feature recipe is another Crockpot main dish that we'll call simply "Crockpot Flank Steak." This recipe is yet another quick and easy one. Prepare it in the morning, cook it in the Crockpot on low for about 8 hours, then you'll have a delicious meat dish ready that evening. We thought the meat was extremely tasty, and meat prepared in the Crockpot always comes out tender and juicy. The chili powder gives the meat a slight kick of flavor, but it's not really spicy at all. It's got a wonderful flavor to it. We'll have to give it four stars. I was leaning more towards five, but my husband had to give it a four. According to him, it just didn't have that extra "oomph" to make it worthy of five stars, but it was indeed worthy of a "Yummy!" rating. I'll be making this one again in the near future, I'm sure. I would even recommend serving this one to company. Serve it up with a baked potato and a vegetable to complete the dinner. Delicious!

Crockpot Flank Steak

Makes 4-6 servings

Ingredients:
1 flank steak (about 1-1/2 lbs.), cut in half if you have a small Crockpot
1 Tbsp. oil
1 large onion, sliced
1/3 cup water
1 can (4 oz.) chopped green chilies
2 Tbsp. vinegar
1 tsp. chili powder
1 tsp. garlic powder
¼ tsp. salt
1/8 tsp. pepper

Preparation:
In a large skillet over medium-high heat, brown steak in oil. Transfer to Crockpot. In the same skillet, sauté onion for a minute or two. Gradually add the water. Add remaining ingredients and bring to a boil. Pour over the flank steak. Cover and cook on low for about 8 hours or until the meat is tender. Slice meat and serve with the onion and pan juices. Enjoy!

I would encourage everyone to consider some of the new waterless cookware out there. If this recipe tasted so good in a crockpot it would probably be accusable of criminal assault if cooked in one of ...
