Pepperoni Pasta...or is that Pizza Pasta?

My recipe for this week is called "Pepperoni Pasta." It could also aptly be called "Pizza Pasta," since it tastes sort of like pizza. It's a fairly easy dish to make--another "mix it all together and bake it in the oven" kind of meal. As you can tell, I like preparing those sort of recipes. I like dishes that aren't too complicated in preparation.

Since it tastes a lot like pizza, this one's a kid-pleaser as well. We gave it three stars because it's pretty good, but it's not far off from being a four-star meal. Serve it up with a nice tossed salad and some garlic bread to complete the meal.

Pepperoni Pasta

Makes 6 servings

Ingredients:
16 oz. package ziti
1 jar (26-28 oz.) spaghetti sauce, divided
1 can (4 oz.) mushrooms, drained
1 package (6 oz.) sliced pepperoni
1 green pepper, chopped
1 small onion, chopped
½ cup grated Parmesan cheese
½ tsp. garlic powder
½ tsp. salt
¼ tsp. pepper
1/8 tsp. crushed red pepper flakes
1 can (8 oz.) tomato sauce
8 oz. shredded mozzarella cheese

Preparation:
Cook pasta according to package directions. Meanwhile, sauté the mushrooms, green pepper and onion in a small skillet over medium-high heat for 3-5 minutes. Then combine about half of the spaghetti sauce, the sautéed mushrooms, green pepper and onion, Parmesan cheese, garlic powder, salt, pepper and red pepper flakes in a bowl. Drain the pasta and add to sauce mixture; mix well. Transfer to a greased 3-qt. Baking dish. Combine the tomato sauce with the remaining spaghetti sauce and pour over top. Cover and bake at 350°F for 45 minutes or until bubbly. Sprinkle with mozzarella cheese. Bake, uncovered, about 10 minutes longer or until cheese is melted. Let stand 5 minutes before serving.
