Garlic: The Good and the Bad

This week I'm posting two recipes we've tried in the last couple weeks. One was really good, while the other was really bad. The first one, Garlic Chicken, is my take on a recipe I found printed with coupons for Lipton soup mix. This dish was extremely flavorful, with its pleasant garlicky tang, and so delicious. The chicken breasts came out tender and juicy, not dry like breasts sometimes tend to be. It was easy to prepare and it bakes for only 30 minutes. My 4-year-old daughter loved it, too. This one easily rates five stars with the McAlisters.

The second recipe, Spaghetti with Garlic, is my version of a recipe I found in a magazine. It sounded somewhat tasty when I read the recipe, and I thought it would be a nice change of pace from regular old spaghetti with tomato sauce. I thought wrong. Think I'll stick to the original. This dish was awful. The consistency was very dry-we felt like we were eating gravel. There was definitely too much garlic and herbs and not enough oil. We thought it was pretty gross, so we gave it one star for a great big "Yuck!" Oh well. Sometimes you hit upon a great recipe and sometimes you don't.

Let me know what you think about the Garlic Chicken. It really did have a great flavor to it. (We enjoyed it more than my famous Oven-Fried Chicken!)

Garlic Chicken

Serves 4

Ingredients:
1 envelope Lipton Recipe Secrets Savory Herb with Garlic soup mix
1/3 cup light mayonnaise
¼ cup grated Parmesan cheese (I use fat-free)
4 boneless, skinless chicken breast halves
2 Tbsp. Plain dry bread crumbs

Preparation:
Preheat oven to 400°F. Combine soup mix, mayonnaise and Parmesan cheese. Arrange chicken on a baking sheet. Top with soup mixture, then sprinkle with bread crumbs. Bake for 30 minutes or until chicken is no longer pink.

Spaghetti with Garlic

Serves 4

Ingredients:
1 package (16 oz.) spaghetti
10-15 garlic cloves
¼ cup olive oil
2 tsp. Dried oregano
4 tsp. Parsley flakes
½ tsp. Salt
¼ tsp. Pepper
½ cup grated Parmesan cheese

Preparation:
Cook spaghetti according to package directions. Meanwhile, in a skillet over low heat, cook garlic in olive oil until lightly browned. Remove from heat. Stir in oregano, parsley, salt and pepper. Drain spaghetti and put in a large bowl. Add the garlic mixture and Parmesan cheese. Toss to coat.
