Five-Star Mexican Meal

This week I hit upon a five-star meal! My husband and I love Mexican food, and we thought this recipe for Mexican Casserole was spectacular. I liked the ease of preparation with this one--you get the same great Mexican flavor without the time it takes to assemble burritos or soft tacos. This is a meatless meal that can be low fat as well with a few substitutions. You can cut the fat by using low fat tortilla chips, reduced fat cheddar cheese and reduced fat or nonfat sour cream. All the other ingredients are already low fat or nonfat. A hearty and filling meal, you'll most likely have leftovers for lunch the next day. Oh, and due to the four cans of pinto beans included in this casserole, you may want to beware of your husband fanning the covers that night and the next. Definitely not a dinner you'd serve to your teenage son before his first date with a girl. In spite of that, this meal is just too scrumptious to let the consequences of consuming it get to you. We will definitely be seeing more of this meal on our dinner table. I'm planning to serve this one fairly often--just need to stock up on the air freshener!

I do hope you'll try this recipe. We only gave it five stars, because that's the highest rating we have--we thought it deserved even higher than a five. Let me know what your family thinks of this one.

Mexican Casserole

Serves 6

Ingredients:
1 package (9 oz.) tortilla chips
4 cans (15.5 oz. each) pinto beans, rinsed and drained
1 can (15 oz.) whole kernel corn, drained
1 can (14-1/2 oz.) diced tomatoes, drained
1 can (8 oz.) tomato sauce
1 envelope taco seasoning
8 oz. shredded cheddar cheese
Optional garnishes:
Shredded lettuce
Chopped onion
Sour cream
Salsa
Jalapenos

Preparation: Preheat oven to 350° F. Crush tortilla chips and sprinkle into a greased 13x9x2-inch baking dish. In a large bowl, combine pinto beans, corn, tomatoes, tomato sauce and taco seasoning. Mix well and pour over tortilla chips. Sprinkle shredded cheese evenly over top. Bake for 25-30 minutes. Serve with your choice of optional garnishes. Enjoy!
