This week we tried two different seafood dishes. The first one was called Western Snapper, but alas, our neighborhood grocery store didn't have any red snapper fillets in their seafood case, so I substituted talapia. This recipe was fairly easy to prepare and the baking time is pretty fast, too. The fillets are breaded in a slightly spicy cornmeal mixture, courtesy of chili powder and cayenne pepper. It had a piquant flavor to it, but it wasn't too hot. We enjoyed it enough to give it three stars for "pretty good."
The second recipe is my husband's invention. He calls it Express Fettuccine with White Clam Sauce. This is a very simple and very fast meal to prepare. Take two cans of clam chowder soup, toss with fettuccine noodles, and voila, you've got dinner. It was extremely tasty, too. We give it four stars on our rating scale.
