Easy Seafood Meals

This week we tried two different seafood dishes. The first one was called Western Snapper, but alas, our neighborhood grocery store didn't have any red snapper fillets in their seafood case, so I substituted talapia. This recipe was fairly easy to prepare and the baking time is pretty fast, too. The fillets are breaded in a slightly spicy cornmeal mixture, courtesy of chili powder and cayenne pepper. It had a piquant flavor to it, but it wasn't too hot. We enjoyed it enough to give it three stars for "pretty good."

The second recipe is my husband's invention. He calls it Express Fettuccine with White Clam Sauce. This is a very simple and very fast meal to prepare. Take two cans of clam chowder soup, toss with fettuccine noodles, and voila, you've got dinner. It was extremely tasty, too. We give it four stars on our rating scale. Try it the next time you need dinner on the table in a hurry.

Western Talapia

Serves 4

Ingredients:
1 ½ lbs. talapia fillets (or red snapper!)
1 tsp. dried oregano
2 tsp. chili powder
¼ tsp. cayenne pepper
2 Tbsp. all-purpose flour
¼ cup cornmeal
½ tsp. salt
2 Tbsp. butter or margarine, melted
3 Tbsp. lemon juice

Preparation:
If needed, cut fish into serving sized pieces. On a plate, combine the oregano, chili powder, cayenne pepper, flour, cornmeal and salt. In a shallow bowl, combine the melted butter and lemon juice. Dip fish into butter mixture, then press into the cornmeal mixture. Place in a shallow casserole sprayed with non-stick cooking spray. Pour any remaining butter over fillets. Bake at 450°F for about 15 minutes, or until fish flakes when pressed.

Express Fettuccine with White Clam Sauce

Makes 4 main dish servings

Ingredients:
1 lb. fettuccine noodles
2 cans Campbell's Chunky New England Clam Chowder soup

Preparation:
Heat soup in a saucepan on the stove until heated through. Meanwhile, cook fettuccine according to package directions. Drain noodles. Toss with clam chowder soup. Serve. Simple, but delicious!
