Lasagna Casserole

My family has always loved my lasagna recipe; however, I only make it a few times a year because of the time it takes to prepare it. It seems like it always takes me an hour or two to get it all put together ready to bake in the oven for yet another hour. Since lasagna is always a big undertaking, it's a meal that is saved for special occasions. Well, this week I came across a recipe for Lasagna Casserole. I used all the ingredients I put in my traditional lasagna, but instead of layers of lasagna noodles, meat sauce, cottage cheese mixture, and mozzarella, everything is thrown together, put in a casserole dish and baked. No more layering, and no more scrimping on the amounts hoping I've got enough left for the final layer. How wonderful! This dish was much quicker and easier for me to prepare than the traditional dish, and you know, it tasted just like my regular old lasagna. Now that the prep time has been severely diminished, my family can enjoy the great taste of lasagna virtually anytime. We rate Lasagna Casserole a four-star meal. Garlic bread and a salad are the perfect accompaniments to this Italian meal. If you love lasagna but hate the time it takes to prepare, you'll appreciate this recipe. I may never make regular lasagna again! I think your family will enjoy this meal as much as mine did!

Lasagna Casserole

Makes 6-8 servings

Ingredients:
1 lb. ground beef
½ medium onion, chopped
1 small can of mushrooms, drained
Salt, pepper and garlic to taste
1 lb. medium shell pasta, cooked and drained
1 lb. (4 cups) shredded mozzarella cheese, divided
1 carton (24 oz.) small-curd cottage cheese
2 eggs, beaten
1/3 cup grated Parmesan cheese
1 Tbsp. parsley flakes
1 jar (26 oz.) spaghetti sauce

Preparation:
Cook beef, onion and mushroom in a skillet until meat is browned and onion is tender. Drain, if needed. Sprinkle with a little salt, pepper and garlic. Add spaghetti sauce to meat mixture and keep on low heat. In a large bowl, combine pasta, 3 cups of the mozzarella cheese, cottage cheese, eggs, Parmesan cheese and parsley. Stir until mixed well. Pour into a greased 13-in. x 9-in. x 2-in. baking dish. Top with beef and spaghetti sauce mixture. The dish will be full. Cover and bake at 350° for 45 minutes. Sprinkle with remaining mozzarella and bake, uncovered, 15 minutes longer or until cheese is melted. Let stand about 10 minutes before serving.

Donna, my husband loves ravioli...please send along your recipe for the Ravioli Lasagna! Sounds like it would be a hit in our house! :)

Yum! Sounds great Allison! One of my daughter's favorite dishes is Ravioli Lasagna made out of cheese ravioli. She can't get enough of it. I'll have to try this recipe out on her. ...
