Since I was on vacation this past week, I didn't have a chance to cook up a new dish for my family. I'm posting the recipe for an old favorite, Oven-Fried Chicken, and the recipe for our preferred vegetable side dish, Green Bean Casserole. Prepare these together, along with mashed potatoes, and you've got one great meal!
The chicken dish is a snap to prepare and very tasty. You can use any type of chicken pieces that you wish, but I prefer to use chicken thighs; boneless, skinless thighs are even better. You may also want to experiment with different flavors of dried bread crumbs. I especially like to use the garlic and herb variety. This main dish has graced my dinner table countless times over the years, including for company, and it's always received glowing compliments. This is a four-star entree. Oven-Fried Chicken is a recipe that will forever remain as one of the "regulars" in our household. The Green Bean Casserole recipe is one of the traditional ones, and it's from Campbell's. It's not just for holiday dinners! We enjoy it throughout the year. It's a great way to get us to eat our veggies, since none of us is really big on vegetables. I make a lower-fat version of the original, by using reduced-fat cream of mushroom soup and skim milk, that is just as scrumptious as the full-fat dish. A five-star side dish, in our opinion.
