Recipe Format

This week I tried a recipe called Mama's Hot Dog Casserole.  I found it in the coupon inserts from the Sunday paper.  It was with the coupons for Texas Pete brand chili sauce and hot sauce, though I didn't use that brand name chili sauce when I made the recipe.  This meal is quick and easy to prepare, doesn't take long to cook, and it's economical, too.  If you like chili cheese dogs, you'll enjoy this dish.  Since most kids I know love hot dogs and cheese, it's kid-pleasing, as well.  My husband and I thought it was very tasty.  We give it a solid four stars.  The only reason we did not award it five stars is because we wouldn't serve this if we were entertaining company.  We'd serve it to family and good friends, but we wouldn't serve it if we'd invited the proverbial boss to dinner.  This meal is a definite keeper.

I've also included a casserole my husband and I created called Italian Dish.  This one is also easy to fix and cooks in 30 minutes.  You can make the casserole up earlier in the day, store in the refrigerator, then take it out and bake it in the oven when you're ready for dinner.  It's a good basic Italian meal that's simple and convenient, and it tastes really good, too.

Mama's Hot Dog Casserole

4-6 servings

Ingredients:
1 (1 lb.) can pork and beans
1 pkg. hot dogs
1 (8 oz.) pkg. shredded cheddar cheese
1 (10 oz.) can chili sauce
Hot sauce to taste

Preparation:
Pour the beans into a 2-quart casserole dish.  Cut each hot dog lengthwise and arrange in a single layer on top of the beans.  Pour the chili sauce evenly over hot dogs.  Sprinkle the cheese over top.  Bake at 350° for about 20 minutes or until hot and the cheese is melted.  Good served with cole slaw and corn muffins.
 

Italian Dish

* I suggest using pasta such as shells, twists, rotini, macaroni, etc. for this dish.  Mozzarella cheese is the most used in this dish, but it is also great with cheddar, monterey jack, or a mix of different cheeses.  Experiment!  We originally came up with this recipe as a meatless meal, but it's good with ground beef, too.  Brown 3/4-1 lb. ground beef with the mushrooms and onions.

Ingredients:
1 lb. cooked pasta
1 small can mushrooms
1 small onion, chopped

I'll definitley be trying the hot dog casserole. Sometimes I'll just cut a slit down the middle of the hot dog, add some cheese, then put them on top of some pork and beans, then heat until the hot. T ...
