Thanksgiving Dessert Recipes

Happy Thanksgiving to you and yours! I'm sharing my favorite holiday dessert recipes with Washington grown ingredients (pumpkin and cranberries). Hope you enjoy them.

I love to cook, but after many years I do admit I like easy and tasty recipes. I also like to shorten anything I can, so the directions are not for beginners. I assume you know the basics, like packing the brown sugar, etc.

Here's my favorite:

Pumpkin Pie Squares

Combine and mix until crumbly:

1 cup flour
1/2 cup oatmeal
1/2 cup brown sugar
1/2 cup margarine

Press into 9x13" pan and bake at 350 degrees for 15 minutes.

Meanwhile mix together and beat well:

1 lb. can pumpkin
13-1/2 oz. can evaporated milk
2 eggs
3/4 cup sugar
1 tsp. cinnamon (I like spices, so I increase it to a Tbsp.)
1/2 tsp. ginger
1/4 tsp. cloves

Pour over crust and continue baking at 350 degrees for 20 more minutes.

Mix together:

1/2 cup chopped nuts
1/2 cup brown sugar
2 Tbsp. margarine

Sprinkle over the filling after the second baking and bake at 350 degrees for 15-20 minutes more.

Cool and serve with whipping cream or whipped topping. Keeps well and freezes nicely, too. Tastes every bit as yummy as pumpkin pie.

This is a nice steamed pudding that's really easy to make:

Steamed Cranberry Pudding

2 cups fresh or frozen cranberries
1-2/3 cups flour
1/4 cup light corn syrup
1/2 tsp baking soda
1/3 cup water
1/4 cup molasses (dark or light, your choice)

Mix ingredients and pour into a greased 8-inch square pan. Steam in the oven over another pan of hot water at 350 degrees for 1-1/2 hours. Cool, cut into squares and serve with the following sauce:

Dessert Sauce

1 cup sugar
1/2 cup cream
1/2 cup butter
1 tsp vanilla

Melt butter. Add sugar and stir until dissolved. Stir in cream and vanilla until warmed.
