Vietnam: Chuoi Dua or Vietnam Desserts of Coconut and Bananas

Vietnamese in general do not eat a lot of cakes, cookies or other sweet dishes . Their main desserts incorporate coconuts and bananas. When I was growing up , these were my favorite desserts and the following are quite easy to prepare This dessert takes about ten minutes to prepare

Bananas in Coconut Cream

6 bananas 2 cups coconut milk 1/4 cup of granulated sugar pinch of salt 1/4 cup of Tapioca Flour

Peel the bananas and slice them lengthwise. In a saucepan, heat the coconut milk with sugar and salt, and cook gently until the sugar dissolved and the tapioca is cooked. Add banana slices and cook gently for 10 minutes. Pour the mixture in 6 to 8 small bowls and serve chilled or warm.

The following banana Dessert is cooked with rice

Banana Rice Pudding

1 1/2 cups cooked rice 1 cup coconut milk 3 medium bananas -- cut in pieces 1/4 cup milk 2 tablespoons honey 1 teaspoon pure vanilla extract 1/2 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg

Directions In a medium-size saucepan, combine banana , coconut milk, honey, vanilla, cinnamon and nutmeg. Bring to a boil, reduce the heat, and simmer until tender. Add rice and milk and mix thoroughly. Bring to a boil and simmer 10 more minutes. Serve warm.

Vietnamese Coconut and Banana with Icecream

1/2 cup of shredded coconut 60g/2oz cup unsalted butter 1 tbsp grated ginger root grated zest of 1 orange 6 bananas 1/2 cup sugar 4 tbsp fresh lime juice 3 tsp toasted sesame seed A couple of slices of lime for decoration Vanilla ice-cream

Roast the shredded coconut until lightly brown Roast the sesame seeds Remove from the pan and allow to cool. Heat the butter in a large frying pan then add ginger and orange zest and mix well. Add to this mixture, slices of bananas cut lengthwise until the mixture thickens , turn the slices until they are totally coated with the butter. Serve with vanilla ice cream. Sprinkle with the toasted coconut and sesame seeds on top. Decorate with slices of lime

I will always remember those desserts ; they are sweet and quite delicious.

These sound so delicious, especially the Banana Rice Pudding. They may be high in cholesterol but I would think that all that fruit would have health benefits too. ...
