The Carrot - Part 1 of a Power Veggie Trilogy

Their may be no scientific data to prove that carrots can improve your eyesight but there is plently of research to show that:
Reducing your fat intake reduces your risk of developing cancer.
Increasing your intake of high-fiber fruits and vegtables reduces your risk of coronary heart disease.
Reducing saturated fat and cholesterol intake, reduces your risk of hypertension.
So treat your tastbuds with this yummy carrot recipes.

Carrot Chile and Cilantro Soup

1 tablespoon olive oil
1 teaspoon crushed garlic
1 tablespoon chopped fresh cilantro
1 teaspoon chile paste
1 onion, chopped
3 large carrots, peeled and sliced
1 large potato, peeled and chopped
5 cups vegetable broth

Directions
Heat oil in a large pot over medium heat.
Heat garlic, cilantro and chili paste.
Saute onion until tender.
Stir in carrots and potato;cook 5 minutes and then pour in vegetable broth.
Simmer for 30 to 45 minutes, or until potatoes and carrots are soft.
With a hand blender, blend until smooth.


OPEN-FACED CARROT SALAD SANDWICH

1/2 small banana, peeled
1 cup shredded carrots
2 tsp lemon juice
1/4 tsp grated lemon zest
2 Bibb or butter lettuce leaves
1 slice whole-grain pumpernickel bread
2 thin unpeeled apple slices

Directions: Mash the banana in a small bowl. Add the carrots, lemon juice and lemon zest, and stir to combine. Place the lettuce on the bread, top with the carrot salad and apple slices.


Whole Wheat Carrot-Pineapple Cake

1 1/2 cup whole wheat flour
3/4 cup sugar
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt (optional)
2/3 cup applesauce
2 egg substitutes
1 cup finely shredded carrot
1/2 cup juice packed pineapple (with juice)
1 tsp vanilla

Directions: In a large mixing bowl, combine dry ingredients.
Make a well in the center and add in remailing ingredients.
Mix well (use an electic mixer if you want your cake especially light). Bake in a Pam sprayed 8 or 9 inch square pan at 350F (180 C) for 30-35 minutes or until toothpick-test done. Insert toothpick into center of cake. If it comes out clean, the cake is done.


Carrot Juice(From http://www.vegweb.com)

4 granny smith apples, washed and sectioned (peeled if wax coated) 6 carrots, washed 2 bananas, peeled 1 pear, optional

Directions: Peel and cut your fruit. In a juicer, alternate all fruit and carrots. Stir, add ice as juice tends to come out room temp.

Be sure not to juice bananas last, as the pulp tends to clog up your juicer if not broken up by "crisper" fruits.

Tofu Carrot Salad (From http://www.vegweb.com)

4 cups shredded carrot 1/4 cups raisins 6 oz canned crushed pinapple, drained 8 oz Soft 1% fat Tofu 3 Tablespoons fresh lemon juice

Directions: Blend Tofu with lemon juice in blender until creamy.
