Soy Foods: Myth or Miracle?

Soy foods is the all-inclusive name for a group of foods that is derived from the soybean. Soy foods are a healthy and cost-effective means of feeding a family. Soy foods are especially important in the diets of vegetarians as they provide an excellent source of protein and other nutrients. Although the soybean can be eaten whole, you will usually find it in the grocery store in one of the following forms:

  • Soy-based Infant Formula - The base for this formula differs from that of regular formula in that it is made from powdered soy protein instead of milk protein. This formula is especially important for babies which have milk protein allergies.

  • Miso - Miso is a great, salty flavoring for soups and sauces. It is made from aged soybean paste. You will find miso in traditional Japanese cuisine.

  • Soy non-dairy foods - These include frozen desserts, yogurt and cheese. Soy milk is naturally creamy and makes a great addition to cheese and ice cream recipes. Soy cheese has a soft consistency which makes it a good substitute for cream cheese and sour cream. These products are perfect for people who are lactose intolerant.

  • Soy Flour - Soy flour is a more concentrated form of protein than all-purpose flour. It is mainly used in commercial production; however, it can be found in many natural-food stores. Keep in mind that soy flour does not have the natural leavening agents that are present in other flours. Your breads and cakes will be denser if you don't leave a portion of the cake flour in the recipe.

  • Textured Soy Protein - You may be familiar with this product by it's brand name, Textured Vegetable Protein. Yes, that is a brand name, owned by the Archer Daniels Midland Company. It is made from soy flour which has been extruded, cooked, and rehydrateddehydrated. It has a chewy texture and can be used as a meat substitute. You may have encountered this product in packaged foods like vegetarian chili or meatless bacon flavoring.

  • Soy Sauce - Soy sauce is one of the most common soy foods you will see. It is the product of fermented soy bean liquid and has a salty taste. It is often used in Oriental cooking and is easily available in the United States.

  • Soy Milk - Soy milk is another soy food which is widely available at local grocery stores. Soybeans are soaked, ground and strained to produce this high-protein liquid. Soy milk is also sold in containers which permit shelf (rather than refrigerator) storage. Lactose-intolerant people who like milk products should try soy milk.
