Keeping Your Family Healthy With Vegetarian Meals

Even though many mothers today work outside of the home, women are often primarily responsible for meal planning and preparation in a family. If you are the cook in your family, you may be looking into cutting down on the amount of red meat that your family consumes. Your family may balk at the idea of never having your famous frosted meatloaf again, but a diet with less red meat is healthier for everyone.

In fact, the American Cancer Society has stated that 'high-fat diets have been associated with an increase in the risk of cancers of the colon and rectum, prostate, and endometrium." In addition, the ACS has recommended that diners "choose foods low in fat" and "limit consumption of meats." You can view the American Cancer Society site at http://www.cancer.org.

So how do you sneak in a few vegetarian meals without making your burger-loving husband and kids leave the table in disgust? It's easier than you think. You may be eating a few meatless meals each week without even realizing it. Pasta with vegetable sauce and vegetable stir-fry are common and quick to make. If you currently eat red meat at 5 or more dinners each week, try to integrate one or two vegetarian meals into the weekly dinner plan. To ease the transition, start with some old favorites, updated to be meatless. For example, veggie or soy burgers offer a great alternative to regular beef hamburgers. Toss a couple on the grill at the next barbecue and invite the family to give them a try.

Fajitas can also be made vegetarian with only minor changes to the recipe. Use hearty portions of sautéed red and green peppers, onions, and squash sticks. You can prepare the vegetables with your favorite fajita sauce or sprinkle generously with lemon juice. Fresh tomatoes, lettuce, rice, sour cream, salsa, and beans can all be piled on a tortilla with the hot vegetables. I encountered a wonderful vegetarian snack or light meal while living in Wisconsin. Coat one side of a pita with cream cheese and sprinkle on finely chopped toppings like: fresh broccoli, tomatoes, red peppers, and black olives. The pita is sliced into quarters and eaten like a pizza. Have one of these veggie pizzas ready for the kids when they get home from school and you might even head them off on their way to the potato chip bag!
