Here are some of the wonderful recipes from the late Linda McCartney. It isn’t specifically a Thanksgiving menu, but I think it would make a great one.

The Vegetarian Times has created a yummy Thanksgiving feast for you, including a vegan pumpkin pie.

From a book named “Vegetarian Magic at the Regency House Spa” the Healthy-Eating.com website has posted a great Thanksgiving menu here.

Hannah Dayan, a vegetarian, has posted a list of great links to recipes that make up a complete Thanksgiving feast here.

Mollie Katzen, the author of many veggie cookbooks, has posted a Thanksgiving main dish idea on her website. Find it here.

From Deborah Madison’s This Can't Be Tofu! here is a vegan recipe for Sweet Potatoes Baked With Orange which I think would make a great addition to your holiday table:

2 pounds sweet potatoes, peeled or scrubbed
½ cup orange juice
2 teaspoons canola oil
plenty of freshly ground black pepper
1/8 teaspoon ground red chili
½ teaspoon salt

1. Preheat the oven to 400 degrees F.
2. Quarter the sweet potatoes lengthwise, then cut them crosswise into chunks about ½ inch or more across.
3. Put the sweet potatoes in a large baking dish, add the remaining ingredients, and toss well.
4. Cover with aluminum foil and bake for 40 minutes. Remove the foil, give the potatoes a stir, and continue baking until tender and glazed, another 20 minutes or so.
