A Peach of a Tree


While researching peaches, I have learned that they actually have less calories than either apples or pears. The sugar content of a peach is referred to by the term, "Brix." Though most peaches are picked while hard so they will not deteriorate before shipment, peaches are the sweetest when allowed to ripen on the tree and plucked only when soft, colorful and, of course, aromatic.

By the way, authorities disagree as to why the peach is fuzzy but there are a few theories! Most experts agree that the fuzz helps the peach defend itself from various threats. Others feel that the fuzz was developed to give the fruit more resistance to insects and diseases. Another theory is that the fuzz protects peaches from sunburn and potential water loss. I should think there is an element of truth in all these notions.
