So now you have a good idea about what kinds of foods you should be eating - they consist of everything except meat and dairy, and obviously sugars, cookies, candies, cakes, white bread, white rice and enriched pastas should either be eliminated or consumed as little as possible. These items have no nutritional value at all. Now let's decide what you eat, when you eat it and how you eat it. Guess what? You can eat whatever you want, when you want and how much of it you want. The thing about leaving dairy, meat and sweets alone is that you don't have to calorie count, fat gram count or be on a strict diet. There is hardly any saturated fat in a diet absent of meat and dairy.

For example, you can have a big bowl of oatmeal in the morning topped with cinnamon, raisins, sugar, walnuts and flax seeds along with whole wheat toast, fruit and orange juice and feel full for hours without consuming many calories and a minute amount of fat. For lunch a healthy tuna sandwich on wheat with lettuce, tomatoes, mustard, onions and Vegan cheese along with a bowl of soup should be plenty to keep you satisfied. Again, low calorie and little or no fat. For dinner? How about some whole-wheat fettuccini with vegetable pasta sauce, Vegan Parmesan cheese, whole-wheat garlic bread and a salad full of every vegetable you can name. Does this sound like you're missing anything?

If you're trying to lose weight and your body needs to rid itself of the weight, you'll see the first several pounds drop off almost immediately. Then the rest will come off gradually and effortlessly until your body reaches its comfortable weight. Your skin will start to glow, your energy level will shoot up and your clothes will get looser and looser each day. If you have high cholesterol it will go down. If you're used to feeling bloated after meals - that will disappear. If you're always tired, you will feel full of energy each day. If you regularly crave "not so healthy foods" those cravings will disappear and your body will crave healthier foods. What more could you ask for?
