Fall Enthrall…


APPLE PIE FILLING: With the massive amount of apples that you have right now, or are about to buy, you may want to start planning for Thanksgiving dessert. You can prepare pie filling that will keep in the freezer until the time to make your pie. Cut, peel, and core apples into pieces, (about eight medium apples will yield one nine inch pie). Then (thanks to Betty Crocker once again), I take and sprinkle 2/3 c. sugar, ¼ c. flour, ½ t. nutmeg, ½ t. cinnamon, and two T. margarine or butter. Mix this together well, and then place into a microwavable container and/or baggie. Then quickly add either pineapple juice over (just covering the apples), or lemon juice/water mixture. While freezing, lay flat, and half way through freezing tip the container upside down or the to cover the sides of the apples that perhaps were not covered by the juice the first time. When you would like to make the pie, prepare pie crusts, thaw filling, and taste to see if after frozen in juice, you need to add more sugar, or rinse some off. Strain the filling before placing in pie crust. Enjoy!

News Flash: I often write my articles with so much enthusiasm, and with so much in mind to say that, many times, I exceed the word limit that all of Suite 101 writers need to abide. With this being said, (with as few words as possible), many of my articles to come will be in the form of parts one and two. ALL IN A SKILLET SUPPER... Stretch that rice or noodle convenience side dish and make it a main meal. To save some cash use off brand, or buy on sale, or make your own with bouillon, garlic, parsley, or gravy. Cook noodles or rice until tender, and saucy (the consistency you prefer), then add corn, peas, carrots, chicken, beef, onions, hamburger whatever you have on hand and have obtained cheaply.

For dessert...Try some applesauce!

Quick Tip: Slice an apple vertically, and dip into paint. Press onto heavy white or colored paper, grocery bags or other means and voila! A country, homemade craft
