Blessings For Tightwads....

  • I am blessed to experience the leaves that fall down every autumn, and the new ones that grow every spring, to watch my children grow another inch. To withstand their noble climbing efforts.
  • I blessed to be given a husband that tells me he loves me, and rushes home daily to see me.
  • I am blessed beyond all for the Saviour who lived and sacrificed so that I may be forgiven, and so that I may live to see these blessings that somedays I don't see at all.

    What it means... With all of the rush in our lives, the new inventions to make our lives more efficient and "better", all of these "things" keep me further from the true source of happiness: the simplicity and appreciation for what has already been given to me.

    My Tightwad Challenge For You: Write down ten things that you are thankful for, that you know are not given to just anyone, and you know you are lucky to have. Can you stop at ten? I can't, and I hope that I never will be able to.


    This Week's, Cheap Meal:

    **PUFFED OVEN PANCAKE** (From BH&G cookbook)

    Melt 2 T. in an ovenproof skillet in a preheated 400* oven until butter is melted and bubbly. Whisk in a bowl 3 eggs, 1/2 c. flour, 1/2c. milk, 1/4 t. salt. Pour batter into melted buttered skillet. Bake for 25 min. or until puffed and browned. Serve with canned peaches and syrup, powdered sugar and butter/margarine or homemade syrup...

    **Easy Maple Syrup** Add 1/4 t. of maple extract or "real" maple syrup to corn syrup, (try about two cups). Taste, if more flavoring is needed add a little at a time, if less is needed add more corn syrup. (There is also a sugar alternative to corn syrup, that I need to try yet, upon success of that version, I will be sure to share the recipe with you)!

    ...And when the kids need a snack...

    **Chocolate Pretzels:** Take desired amount of pretzels,(nuts, raisons and candy if desired), and melt 1/2 c. or more of chocolate chips in the microwave. If desired, stretch it out with a little bit of water, stir well. Drizzle over munchies, or promise to forgive yourself, and dip them straight in the chocolate. Oh so yummy, and oh so cheap!
