This Week's Cheap Meal: BLACK BEAN CHILI (from the Michigan Bean Commission)
  • 2/3 c. dry black beans cooked and drained; or 1 can (15 1/2 oz) drained and rinsed
  • 2 c. canned tomatoes or fresh tomatoes chopped
  • 1 can (15 oz.) corn drained
  • 1/2 T. Chili Powder
  • 1/2 T. Garlic Powder (optional)
Combine beans, tomatoes, corn and spices in saucepan. Bring to a boil and simmer until heated. Serve with corn chips, tortilla chips, corn bread, pita bread, rice or use atop baked potatoes. *This is a yummy, cheap, and nutritious meal that is a favorite of mine and our kids. I generally add some cheese to this recipe and we dip tortilla chips in it like a salsa.

...And if the kids eat their supper: YUMMY ISLAND COOKIES (Adapted from Nestle's Cookie book)

  • 3/4 c. butter/margarine
  • 3/4 c. brown sugar
  • 1/3 c. sugar
  • 1 t. vanilla
  • 1/2 t. salt
  • 3/4 t. baking powder
  • 1 egg
  • 1 2/3 c. flour
  • 2 c. choc. chips
  • 1 c. coconut
  • 3/4 c. walnuts, macadamia, almonds or other nut
Mix ingredients together in order listed. Preheat oven to 350* oven. Drop by teaspoons on an ungreased cookie sheet, and bake until lightly browned. Stand back, because the kids might plow you over to get a handfull of these warm-out-of-the-oven awesome cookies!

This Week's Tip From a Friend: This week's tip originates from my mother-in-law... To make a room appear larger, as well as add warmth and originality, try wallpapering one wall. This creates an optical illusion of depth, yet does not tire the eye of too much of one pattern.
