Ingredients:

2 boxes cornbread mix

10 oz. frozen, chopped broccoli

1 small onion, chopped

4 eggs, beaten

1 stick margarine, softened

12 oz. small curd cottage cheese

Mix all ingredients together and pour into a lightly greased 9X13 baking pan. Bake at 350º for 30 min.

Shrimp Gumbo

Ingredients:

2 cups sliced, fresh okra or 1-10 oz. pkg. frozen

1/3 cup vegetable oil

2/3/cup chopped green onions

3 cloves garlic, finely minced

1 lb. peeled, deveined shrimp

2 cups hot water

1 16 oz. can whole tomatoes, drained 2 bay leaves

1 ½ cups cooked white rice

Salt and pepper to taste

Sauté okra in oil 10 minutes. Add onion, garlic, shrimp and cook for about 5 more minutes. Add water, tomatoes, and bay leaves. Cover and simmer for 20 minutes. Remove leaves. Stir in cooked rice. Season with salt and pepper if desired. Makes about 6 servings

Ok I have eaten squirrel stew and it was ok but not as good as rabbit stew. I must say I have never eaten possum stew though. One of my cookbooks has a recipe for bear stew.
