Culinary Kudzu is an excellent and unique cookbook! I've always loved to read cookbooks, but Keetha Reed has added an extra special touch by sharing not only her favorite southern cooking recipes, but also her thoroughly enjoyable and heart-warming stories of "growing up southern" in the Mississippi Delta.

Along with her delicious recipes, Keetha offers tips and advice for planning parties, wedding receptions, holiday meals and food gifts for all seasons. This is a great addition to any kitchen library and a great read to accompany Mee Maw's Trash.

Of course no southern cookbook would be complete without a Hash Brown Potato Casserole recipe. Here's Keetha's version:

"This is a classic at our family table. Go ahead, gourmets, turn your nose up at the Cream of Chicken soup and crushed Corn Flakes, but this dish is good."

32 ounces frozen has browns
1/2 cup unsalted butter, melted
1 10 1/2 oz. can Cream of Chicken soup
8 ounces sour cream
12 ounces shredded Cheddar cheese
1/2 small onion, chopped
1 teaspoon salt
1/2 teaspoon pepper
2 cups crushed Corn Flakes
1 stick unsalted butter, melted

Preheat oven to 350 degrees F.
Thaw hash browns. Combine hash browns, 1 stick melted butter, soup, sour cream, 2/3 of cheese, onion, and seasonings in a large bowl. Spoon into lightly greased 9x13" casserole. Top with remaining cheese and crushed Corn Flakes. Drizzle with melted butter. Bake for 1 hour.
Before baking, casserole can be wrapped and frozen for weeks.
Thaw overnight in the refrigerator before baking.
