You'll simply need a cast iron skillet (my sister-in-law uses a non-stick pan for hers), a stick of butter, and a medium-sized head of cabbage. Core your cabbage and dice in large squares. Heat up your skillet, melt your butter, and add the cabbage. Sprinkle black pepper all over the top. Fry your cabbage, stirring frequently, until it becomes translucent and then begins to brown or caramelize. Sometimes you need to add a little more butter, and I always add pepper during several stages of the cooking. This is just delicious! For a spicier version, toss some chopped cayenne peppers or some crushed red pepper flakes in with the cabbage.

Cabbage Soup is a is excellent for those who are trying to eat lite! There are a billion versions of this soup out there floating around, and hospitals even use this for patients who need to lose a lot of weight quickly before having surgery.

Ingredients:

1 small head of cabbage, cored & cut up
1 or 2 cans of stewed tomatoes
1 large onion, diced
2 green bell peppers, diced
6 carrots, sliced (or 2 cups of baby carrots)
6 celery stalks, sliced
2-4 cups of V-8 (I prefer my soup thicker, so I use 2 cups)
1 package of onion soup mix
1 tbsp chopped garlic

Put all your ingredients in a large pot and bring to a boil. Boil for 10 minutes, and then turn down to medium and cook until vegetables are tender. Easy as pie!

Hamburger & Cabbage Stew is one of my favorite soups, and it is cheap and easy to make, especially if you are growing your own cabbage.

1-2 lbs of ground beef, browned and drained
1 large onion, diced 1 can of yellow, whole kernel corn (frozen or fresh off the cob will work)
1 small head of cabbage, cored and cut up
2 large cans of stewed tomatoes
Salt & Pepper

Put all your ingredients in a pot and cook until your cabbage is tender. Excellent!

Sausage & Cabbage Skillet - As my husband would say, this one is so good, it'll make you slap your mama! Plan on using your biggest skillet if you don't want a HUGE mess on your stove.

Ingredients:

1 head of cabbage, cored and cut up
4 of your favorite apples (I use McIntosh), cored, peeled, sliced
1 large onion, cut into chunks
1 lb of spicy breakfast sausage (or kielbasa, sliced)
Salt & Pepper

In a very large skillet, brown your sausage (do not drain!). Then, add your apples, onion, cabbage, salt and pepper, and fry on medium until your cabbage and apples are tender and caramelized. I can't put into words how wonderful this is! If you use kielbasa, you may need a little bit of butter (½ a stick or so) to keep everything from sticking. It's lighter with kielbasa, but I prefer it with breakfast sausage. You can also do this one with ground beef.
