Peaches
Peaches are bountiful in southern Ontario at this time of the year. The peaches are a beautiful rich orange colour with a sweet taste that melts in your mouth. I love the taste of peaches and all the wonderful treats one may make with this wonderful fruit. Enjoy these mouth-watering peach delights. No Cook Peach Freezer Jam Clean and pit approximately 3 1/2 cups of peaches. Use a liquid measuring cup to measure the prepared fruit. Finely chop the peaches. Place the peaches in a glass dish with a lid. Combine 1 package of light pectin (certo) with 1/4 cup of white sugar. Stir the sugar mix into the strawberries, cover and let sit for 30 minutes. After the 30 minutes, stir in 3 cups of white sugar. Be sure most of the sugar is well blended. Pour the jam into sterilized glass jars, seal the jars and let stand at room temperature for approximately 24 hours until the jam sets. The jam may be left in the fridge for 3 weeks or placed in the freezer. When filling the jars leave some space for the jam to expand in the freezer. This jam is easy to make with children and tastes wonderfully. Peach Cake Melt ¼ cup of butter in an 8*8 or 9*9 cake pan. Sift 1 cup of flour with 2 tsp. of baking powder and ¾ cup of granulated white sugar. Gently stir in ¾ cup of milk. This mixture should be free of lumps. Pour the batter into the pan with the melted butter. Add 2 cups of sliced fresh peaches to the middle of the batter. Cook the cake for 1 hour in a preheated oven of 350 degrees. Let cool for 10-15 minutes. Serve with a big scoop of vanilla ice cream. This is my favourite summer cake; it melts in your mouth. Peach Crisp Peach Filling: Sift ½ cup of sugar with 1 tablespoon of flour. Mix 2 cups of sliced fresh peaches with the sugar mixture. Place the peach mixture in a round casserole dish and pour ¼ cup of water over the mixture. Topping: Combine 1 cup of oats with 1 cup of white flour, 1 cup of brown sugar and ¼ teaspoon of baking powder. Stir in ¼ cup of melted butter to make a crumbly topping. Crumble this all over the peach mixture. Cook the peach crisp in a preheated oven of 350 degrees for approximately 45 minutes. The topping should be a golden brown.
