The signs of springs are here. Warmer weather and thousands of winter hermits are wandering outdoors from sunrise to sunset. My son and I are taking full advantage of the warmer weather. Cycling, hiking and walking are a daily ritual in our homes. We love to be outdoors all day. Food choices are difficult until I began surfing the net for snacks. There are thousands of snack recipes, that are quick and easy. These are our family favorites. Enjoy!! Outdoor Snacks

Fruit Roll-ups: Place cellophane over a cookie sheet. Be sure it is taunt and free of wrinkles. Pour applesauce in the middle of the cookie sheet (pureed: no lumps). Spread out with a metal spatula, make about 1/4 inch thick. (The thicker it is the longer it takes to dry. The thinner it is the less flavorful.) Place in the oven overnight. If a gas stove, do not turn on, the pilot light will dry it out over night. If an electric stove, place on the lowest setting but be sure there is a little heat. In the morning, peel off the cellophane and enjoy. Roll them up and take them on your journeys.
Alternatives: Use baby fruit such as blueberry or apple/banana. There is a great selection in the baby section. Dried Banana Chips: Peel a banana and slice very thin. Place on a cookie sheet and place in the oven on a low heat for approximately 6 hours. The time varies depending on the thickness of the banana slices and the heat of the oven. You must cook slowly in the oven, you are drying the fruit but not cooking it.
Alternatives: Use any fruit. Cut very thin, depending on the fruit depends on the amount of time needed for drying. Muffins: Use any muffin recipe. A great tip is to make the batter and place in paper muffin cups and freeze in the muffin container. Once frozen pop out and store in bags in the freezer. Each day you can have fresh muffins without the hassle. This works great. Breadsticks and Pretzels: They carry well and kids love them. Make a batch then freeze. Take out the night before to defrost. Crackers and Spread: Make your own or store bought crackers. Place in a small storage container. Less chance of breaking on your journey. My favorite spreads are peanut butter and cream cheese. They store very well. And almost all children love cheese and peanut butter.
