If you dig them from the ground, you will need to clean them of soil, dry them and keep them in a well-ventilated area at about 70ºF. (21ºC). Storage temperatures should not go above 90ºF (32ºC) nor below 65ºF (18 ºC). Some people use old nylon pantyhose or old mesh onion bags; some put them in paper bags.

While days are still warm, but nights drop below the magic number, I haul my pots in for the night and put them back outside during the day. But, once days start to cool, even if the plants still look grand, I give up and bring in my pots. I simply dump the pots in my laundry room and let the foliage die back. I do not water them at all during winter. In spring, about six weeks or so before I can set the pots outside, I dump out the old pots and repot my tubers in new mix. I water them once and set them on a shelf by a window, keeping an eye on the pots to make sure they don't dry out. It takes several weeks to see new growth, even if the tubers have started to sprout in the old dry potting mix. By the time they are starting to grow well, the weather has warmed enough to put them out for the summer. So far, this has worked just fine for me for the last several years.
